Coconut Cream Mini Doughnut Recipe (Dairy-FREE)

Dough:
1.5c white flour
.5c sugar
1 tsp baking powder
.5tsp baking sode
pinch of salt
1tsp Epicure's vanilla
1/8tsp fruit crumble spice
1egg or egg white
.5c premium coconut milk in a can
1/3c oil
3/4c coconut milk or any type

-Whisk Dry in large bowl
-Mix wet in the center and mix together
-Cook 2/3 full in silicone doughnut molds at 350 for 12-15 minutes http://epicureselections.com
-Allow to cool, cut in half

Coconut cream:
3/4c coconut cream (other part of the premium can of coconut milk in a can)
.5tsp epicure's vanilla
pinch of salt

-use metal bowl, chilled for 20 minutes in fridge
-mix on low until bubbles at 30sec
-mix on high for 2 min

Make donuts into a sandwich, with the coconut cream in between the layers. Use left over cream to make into glaze (add milk and icing sugar until thinner). Dress with toasted coconut or Epicure's dark chocolate sprinkles.

Dairy-free, Egg-free, Nut-Free Banana Chocolate Chip Cookies



1 1/2 cups organic whole wheat flour (or any other type of flour)
1/2 cup brown sugar
pinch of salt
tsp vanilla
tsp cinnamon
1/2 tsp baking soda
3/4 good quality oil
1 tsp corn starch mixed with 2 tbs water
2 mashed bananas
1 3/4 cups of quick oats

Directions:
1. Preheat oven to 375 degrees.
2. Mix all ingredients in large bowl with large spoon
3. Scoop onto lined cookie sheet in 1tbs balls
4. Cook for 13-15 minutes

Who needs bathroom drapes anyways?


Dear WestJet Vacations,

I have noticed your underlying hatred and displeasure toward happy people vacationing. I have also noticed that somehow you have a reputation for helping folks have a kick-ass time all around the world. Apparently they all had drapes in their bathroom.

I am curious if the hotel's fantastic beach-side "upgrade" to the room with no bathroom drapes was indeed a hi-jinx for the hotel's pleasure and amusement. The bathroom, other than having a beach-front view of my booty was  luxurious with fantastic mosaic-tile.

From my correspondence with Westjet customer service, I longed for someone to speak to the hotel. To ensure that no one else would get upgraded to a similar room with no drapes. Also perhaps, an apology.

Instead, the only reasonable outcome would be for them to insist I am a liar. And the bathroom was in fact not requiring drapes as the windows were one-way. This is very interesting, as I recall seeing through them myself. With my eyes. As well, what I can assume was other people's eyes. On me.

As a consolation, at least there are drapes now on said window. Although we did have to wait until half-way through our vacation. But, who needs drapes anyways when you have magic one-way, then two-way, then one-way-again windows?

P.S. Other than that, it was a most wonderful vacation away from constant poop and vomit. And I highly recommend it.

Valentine's Day Prep

Every reason to celebrate at our house is a good reason! This year for Valentine's day, we made our own Valentine's day cards. 


Needed:
3- 12"x 12" red and pink paper
Assortment of stickers
Markers

I cut the paper into same-sized cards and let him colour and sticker them to his heart's desire. 


I decided  to make then this year because my oldest son is 5 and loves doing crafts. Another reason is that we like to keep things like this for keepsakes or to put into his scrapbook. Secretly I am hoping some other parents will help their little ones to make their valentines because I would love to keep some things this year from some of his wonderful school friends.


Some other Valentines ideas are:

We like to decorate our house with hand-made felt hearts, make pink drinks and cookies and have ourselves a family Valentine's day party!

We also find heart-shaped pasta and have that for dinner.

The kids love it...and really so do I :)

The Mimicking 4/5 Year Old


Hello. I am almost 5 years old and I copy every behavior I see. Especially if it's mal-adaptive, angry, or volatile. What's that you say? I live with another spirited child, perhaps a teenager? Well, that sounds fantastic.

Sometimes my spirited sibling yells. It's quite interesting. A lot of things I don't understand. One day I know I will know what those things mean and figure the whole world out.

Today she slammed her door. That did sound scary at first, then I thought, "Hey, I could do that!" And so I did. It's a difficult habit to break. The sound...people's reactions...I really like getting out all my frustration really fast.

Here are some things my parents do to help me not do those things:
1) Try to create space between me and the other person. Sometimes they tell me to go to my room. I know why because they have told me about this before. I just play in there or sometimes listen to what's happening.
2) Talk to me calmly when the emotion tornado has calmed.
3) Let me cry a few minutes if I need to then sit with me on the floor until I feel better.
4) Have a snack together. Sometimes the worry upsets my stomach and it helps to have a glass of milk and crackers.
5) I like when my parents remind me of how it's not my fault and tell me when I am doing something they like. Like talk with my nice words or share nice with my baby brother. It helps me to know that things will be okay and people can go back to "normal". Whatever that means anyways.
